COOKED OX HAM
This is surely one of the Salumificio's most unusual products, where Chiapella wanted to best express its passion for pork butchery, as well as a further tribute to the Carrù Bue Grasso (fat ox). This completely new speciality uses a special part of the ox shank, well-trimmed and with the fat removed. It is excellent enjoyed on its own, or accompanied by mustard or delicate mayonnaise-based sauces.
