FARMER’S SALAMI
The farmer’s salami of Salumificio Chiapella is a genuine return to our roots, a revival of the history of our countryside in the production of an authentic homemade salami. Just like our grandparents did, the cubes of fat to be added to the fine meats are cut with a knife. The lack of suitable and controlled spaces for curing once required a greater quantity of pepper and spices to be added to promote the preservation process. This is why today, by reviving the ancient recipe, our farmer’s salami features a lean mixture interspersed with diced lard. We have improved the ancient techniques while maintaining the flavour of the past.
